Recipe of the Week: Spicy Country Fried Okra

Featuring Lockewood Acres’ certified naturally grown okra and roasted garlic salt.

Ingredients

½ lb okra

½ tbsp paprika

½ tbsp cajun seasoning

½ tbsp black ground pepper

1 tbsp Lockewood Acres’ Roasted Garlic Salt

1 cup of flour

1 cup of cornmeal

¼ cup buttermilk

2 egg yolks, beaten

Oil for deep frying

~Dry dip~

Mix together ½ cup flour, cornmeal, garlic salt, ground pepper, paprika, and Cajun Seasoning in a medium bowl.

~Wet dip~

In a separate, medium bowl mix together ½ cup flour, salt, pepper, egg yolks and buttermilk. If too thick, add tbsp of water.

Heat oil in a large pan or wok (~345° F). Rinse okra in water to dampen then dip in dry mix. Shake off excess dry mix and dip each piece in wet mixture and return to dry mix for one final dip.

Place okra in the hot oil and fry for approximately 10 minutes or until well browned. Remove okra and place on a paper towel covered plate to drain. Enjoy!
