Recipe of the Week: Stuffed Patty Pan Squash

10 patty pan squash
1/4 tsp salt
5 slices of bacon
1 lb ground beef
1/2 cup chopped red onion
1 tbsp minced garlic
8 oz baby spinach (chopped)
2 large eggs, lightly beaten
2/3 cup cooked rice (white or brown)
1/2 tsp black pepper
1/4 cup fresh dill (chopped)
5 oz feta cheese (chopped)
Preheat oven to 350 F. Cut off tops of patty pan squash and scoop out pulp. Rough chop squash pulp and retain 1 cup for stuffing. Sprinkle squash bowls with salt and transfer to baking dish. Bake for 10 mins.
Cook bacon in large non-stick skillet. Cook until brown. Add ground beef to skillet, crumble and cook until brown. Add onion, garlic, and reserved cup of chopped squash pulp, and cook, stirring occasionally until tender (about 3 mins). Stir in spinach, cover and cook until wilted. Uncover and cook until liquid is almost evaporated. Transfer beef mixture to a bowl to cool for a few minutes.
Stir eggs, cooked rice, pepper, and 3 tbsp of dill into mixture. Gently stir in feta. Spoon mixture into squash bowls, cover with squash lids, bake at 350 for about 10 mins or until lids brown. Enjoy!
